About
Unblind My Mind is a nonprofit organization raising awareness of the link between the food we eat and the growing health ailments, from allergies to the growing brain disorder epidemic. We advocate diet reform as the first line of therapy in treating many common ailments. We are what we eat, but most of us don’t know what we are eating.
We are what we eat, but most of us don’t know what we are eating.
Our mission is to create a community with heightened awareness of the food we eat and its impact on the brain and overall health. But food choices are only choices when we are aware of what we are eating. We believe the health care revolution begins with us making healthy food choices. We report food and drug manufacturing practices and their impact on health, particularly on our brains. Once you are aware of what you are eating, we help you implement healthy choices in your diet and environment.
We communicate with our community through this website, blog, books, videos, and other social media. Health care reform begins by empowering ourselves to make better food choices and demand that healthy food choices are available today and in the future.
As a youth, I never paid attention to food nutrition. I loved sweets, especially milk chocolate. In graduate school I studied biochemistry and taught Chemistry of Nutrition. From a scientific perspective, I appreciated the link between nutrition and vital biochemical functions.
My career has focused on protein chemistry mainly as it applies to developing protein therapeutics. When I became a mother, I was more conscious of healthy food and I felt like I was making healthy food choices for my family. But my life dramatically changed when my youngest of five children (3 biological and 2 step children) was diagnosed with Autism, moderate on the autism spectrum.
After much of my scientific research, my daughter’s autism is completely managed through diet. This mission isn’t about implementing the newest fad diet, but starts with the basic question of “what are we eating?”. Finding out what I was feeding my family involved detective work of decoding food ingredient labels.

The scientist in me researched brain chemistry and I discovered that what I was feeding my family was causing the behaviors associated with my daughter’s autism. Furthermore, I found that what most of us are eating is leading to all sorts of serious health consequences.
I incorporated the same diet modifications that I put my then 4 year old girl through. I feel fantastic. More energy, fewer allergies, less headaches, no brain fog – gone! The list goes on. I’ve changed the lives of many of my family and friends and I want to share this information in hopes you experience this life change.
